Baked sweet potato with jalapeno sour cream !!

The sour cream was spicy enough to be the perfect match for the sweetness of the potatoes!!

Ingredients :

• 4 sweet potatoes

• 500ml sour cream

• 4 Tbsp maple syrup (or more is desired)

• 2 finely diced jalapeno (without the seeds)

• the Juice of 2 Limes

• A pinch of chives for garnish

• Salt and Pepper to taste

Steps:

1. Bake the sweet potato in a 400F oven for 40 to 45 min, or until tender.

2. Mix the other ingredients in a bowl.

3. Enjoy !!
