Vegetarian Sloppy joes

Messy, Cheesy full of flavor, and quick!

Ingredients:
- 1 block of ''ground beef'' tofu (or 1 pound ground beef) 
- 2 Onion diced 
- 2 Bell Pepper diced 
- 4 Celery stalk 
- 1 garlic bulb minced 
- 3/4 cup of Ketchup 
- 3/4 cup Chili Sauce 
- 1 can Tomato soup 
- 1 Tbsp Worcestershire sauce 
- 1 cup vegetable broth (if you use the tofu ''ground beef) 
- 1 tbsp cumin 
- 1 Tbsp Chili 
- 1 Tbsp Oregano 
- 1/2 Tsp chili flakes 
- 1 tsp smoked paprika 
- 1 tsp maple syrup (for acidity) 
- Cheese of choice to taste, ( I did a mix of mozzarella and cheddar, but Monterey jack would be good) 
Steps :
- Cut all the vegetable 
- Cook the onion, and garlic until soften. 
- Add the tofu and cook for 2 min. 
- Mix chili sauce, ketchup Worcestershire sauce, tomato sauce together. 
- Add the celery to the onion garlic and tofu and cook for 2 min. 
- Add the sauce mix, and adjust the liquid level with vegetable broth. 
- Cook until hot. 
- Put the sloppy joe mix on hamburger bread, cover with too much cheese, and cook in the oven at 400F until melted golden.
