BLT Egg Sandwich

This egg sandwich is perfect for a quick summer breakfast


Ingredients:

  • Buns

  • butter or bacon fat

  • 2 to 3 eggs

  • Tomato sliced

  • Onions sliced

  • lettuce

  • salt and pepper

  • Suisse Cheese (or cheese of your choice)

  • Mayo

  • Bacon (optional)


Steps:

  1. Cut and cook the onions in butter or bacon fat until golden

  2. While the onions are cooking in a bowl mix the eggs and seasoning of choice.

  3. Once the onions are fully cooked add the egg mixture in the same pan.

  4. Add a slice of cheese in the eggs as they start cooking.

  5. Once the eggs are cooked on one side fold the egg in half to cook the inside.

  6. When the eggs are cooked cut in half and cook the buns for 2 to 3 min until crispy.

  7. Assemble the bugger and enjoy !
