Better than store-bought Veggie Burger !!

Those burger were packed with flavor, they were the best homemade burgers i ever had!

Ingredients :
- 1 Mushroom Crate 
- 1 Medium Carrot 
- 1 Brocoli Head (only the florets, approximately 2 cup) 
- 1 Medium Onion 
- 1/2 Garlic Bulb, pealed 
- 2 Tbsp oil (+ more for cooking) 
- 2 Tsp Smoked paprika 
- 2 Tsp Chili Powder 
- 1 Tsp Steak Seasoning 
- 2 Tbsp dehydrated chives 
- Lots of salt and pepper 
- 1 19oz can of black beans 
- 1/3 cup of walnut halves 
- 142g of spinach (a whole container cause Fuck it XD) 
- Fresh Herbes of choice (coriander, parsley, chives) Big handful 
- 3/4 cup panko or breadcrumbs 
- 3 Large Eggs 
- 156 ml of tomato paste 
- 1 cup COOKED rice 
- Buns, tomato, lettuce, cheese, pickled onion, sauces 
Instructions :
- First thing you'll need to do is cook rice according to the instructions. 
- Preheat your oven to 400F 
- Roughly chop, Mushrooms, carrot, brocoli, onion, garlic and add into a food processor with 2 Tbsp of oil, smoked paprika, chili powder salt and pepper and let it chop the veggies until coarsely ground. 
- Spread the veggies on a parchemin paper lined baking sheet and cook for 30 min mixing halfway. 
- While the veggies are cooking rince the black bean and spread on a parchemin paper lined baking sheet and add once the veggies have cooked for 15 min. cook for 15 min. (beans will split open in the oven that's what we want) 
- While the beans and veggies are cooking, quickly rince and dry your food processor and add the walnut, spinach, and fresh herbes until they reach the size of large breadcrumbs. 
- Let the veggies and bean cool then add to the food processor for a few sec, we want to keep some of the beans not fully chopped. 
- Add the eggs, panko, tomato paste and pulse again only a few times until it's all incorporated but not a paste. 
- Transfer the mixture into a mixing bowl and add the cooked veggies and rice. 
- Form patties will make approximately 9 patty. 
- Cook in a non stick pan with a little bit of oil to prevent sticking, cook a few minutes on each side until browned on both side. 
- Serve with your favorite burger toppings ! 
Patties can be frozen with parchemin paper in between patties and be reheated the same way you cooked them the first time in a non stick pan with a little bit of oil.
