Homemade vegetarian gyro from scratch

They were so Good Luigi thought it was the real thing !!!


Vegetarian Gyro with homemade naan bread and tzatziki

Ingredients meat substitute:

  • 1 bloc tofu300 ml flour (or more if needed)

  • 1/2 cup vegetable broth

  • 2 eggs

  • 1Tbsp miso paste

  • 1Tbsp soy sauce

  • 1/4 cup nutritional yeast

  • 1 Tbsp Oil

  • 2 Tbsp chili powder

  • 2 Tbsp Paprika

  • 2 Tbsp Garlic Powder

  • 1 Tsp onion powder

  • 2 Tbsp oregano

  • 1 Tbsp Rosemary

  • 1 Tbsp Liquid Smoke (Optional)

  • 1 Tsp MSG (optional)

  • lots of salt and pepper


Steps:

  1. Blend the tofu in a food processor then mix all ingredients in a bowl.

  2. Test the texture of the mixture making sure in kinda hold shape, if it does not add more flour.

  3. Cook at high in a frying pan with oil until really crispy and press on it to make tiny pancakes


Naan Bread:

  • 1/2 cup warm water (between 105 and 110F)

  • 1 Tsp Sugar

  • 1 package active dry yeast (0.25 once (7ml))

  • 2 1/2 cup flour

  • 1/4 cup alternative milk of choice

  • 1 Tsp lemon juice

  • 1 Tbsp Oil


Steps

  1. Mix water, yeast and sugar together.

  2. While the yeast is blooming, mix all the other ingredients then add the yeast to the bowl.

  3. Kneed for 5 to 10 min or until obtention of a ball or use a stand mixer until reaching a ball.

  4. Cover with a damp towel and store in a warm area for 1h.

  5. Separate the dough in 8 equal pieces

  6. Roll each ball to approximately 1/4 inch thickness.

  7. Cook in a really hot frying pan until it bubbles then flip, add oil on each side while the other side is cooking.


Tzatziki:

  • 1 Cup Greek plain yogurt

  • 1 small grated cucumber (1/2 cup grated)

  • 1 Tbsp lemon juice (or more)

  • 2 garlic cloves grated

  • 1 Tbsp chopped dill

  • salt pepper to taste


Steps:

  1. Grate the cucumber and place it in a towel and squeeze out the excess water.

  2. Mix all in a bowl, enjoy
