Vegetarian (or not) Québec Shepherd's pie, with Cursed Rosemary Parmesan Mashed Potatoes

A layer of ground beef, corn then potato with a nice crispy crust on top of this so comforting!



Ingredients :

Cursed rosemary parmesan potatoes:

  • 5 pounds of potatoes pealed and chop

  • 2 cup vegetable stock for cooking (optional)

  • 2 to 3 cloves of garlic

  • 1 cup of milk

  • 2 table spoon of butter

  • 1& 1/2 cup of shredded parmesan

  • 2 Tbsp or Rosemary (fresh if possible)

  • 1 Tbsp Chives

  • Salt and Pepper to taste


Shepherd's pie:

  • Cursed potato mashed

  • 2 can of Cream style corn

  • 4 cup of frozen corn (or equivalent in cans)

  • Ground beef tofu 2 block (see recipe on my website)

  • 2 onions

  • 1 Tbsp butter for crust

  • 2 Tbsp butter for cooking

  • 1/3 Tsp smoked paprika

  • Salt & Pepper

  • 1 to 2 cup of broth as needed (for the ground beef texture)

Steps:

  1. Peal and cut the potatoes, rince and add to a pot filled with water enough to cover them.

  2. Add the Garlic cloves, and stock of your choice and cook on high temp until potatoes can be broken easily with a fork or butter knife. (between 15 to 30 min)

  3. While the potatoes are cooking, cut 2 onions and add them to a frying pan.

  4. Add 2 tablespoon of butter (if using tofu ground beef) then add the tofu ground beef or the meat of your choice.

  5. Cook until hot (or cooked), add black pepper, and broth if using tofu.

  6. In a roasting pan start by adding a layer of ''meat'', then the Cream style corn, then corn.

  7. Mashed the potatoes and add them on top of the corn without spreading until you have a full layer of potato. then you can smooth the potatoes, add smoked paprika and melt butter on the potato.

  8. Cook in a preheated oven for 20 to 30 min until there is liquid bubbling from the side on the surface. (see video for a more detailed explanation).
