This recipe is cheesy, spicy, comforting and full of flavor!
Ingredients:
1 (540ml) Can Kidney Beans rinsed (half roughly chopped)
2 Onions diced
1 Green Bell Pepper
1 Red Bell Pepper
1 Bulb minced Garlic
2 cup uncooked rice, cooked with 3/4 cup less water than needed
400g meet substitute, or ground beef
1/2 cup Cine (to deglaze)
1/2 cup Kraft Dinner powder
1 cup Milk substitute or milk
2 cup of Grated Cheese
1 cup parmesan
1 (700ml) Can of Diced Tomatoes (with liquid if needs more liquid)
1 cup Medium salsa
1 cup Queso
1/2 tsp Chipotle powder
2 tsp Chili powder
2 tbsp Mexican Oregano
1/4 tsp Chili flakes (double it if no chipotle powder)
2 tsp Cumin
2 tsp Paprika
Salt & Pepper to taste
Steps:
Cook the rice with 3/4 less liquid than required, remove from heat once all the liquid is gone.
In a big pot, start by melting the butter.
Cook the onion and garlic until fragrant.
Add the full size kidney beans.
Add all the spices and mix everything together
Add the meat and the chopped kidney beans, cook for 3 to 5 min.
While the meat and kidney beans are cooking, start mixing the milk and cheese powder together.
Deglaze with the wine.
Add the cheese and milk mixture, rice, bell pepper and mix.
Cook for 2 to 3 min.
Add the Cheese, salsa, queso, parmesan and cook for 2 to 3 min.
Add the diced tomato (with juice if need more liquid, without juice is the mix is liquid enough already)
Cook until all the cheese is fully melted (5 to 10 min)
Serve hot.
