Creamy Egg Salad Sandwich

Creamy, Spicy, and oniony this is the perfect combination for an egg sandwich.
Ingredients:
- Bread (of your choice) 
- 1 egg per sandwich. 
- 2 TBSP of Mayo per sandwich. ( 1 cup for 12 eggs approximately) 
- Salt, Pepper 
- Green onion (or 1/2 a regular yellow onion) 
- Sriracha 
Steps:
- Add the egg to warm water and bring to a boil. 
- Boil the eggs for 10 min. 
- Cool down the eggs in an ice bath and peel immediately. Dip back in cold water to help and to clean the small shell that sticks to the egg. 
- Once peeled, mash the eggs until you reach a small granulated texture, no big chunk. 
- Add the mayo, chopped green onions, salt and pepper and sriracha. 
- Serve with your favorite bread, toasted with butter or not depending of your mood!
