Creamy, Spicy, and oniony this is the perfect combination for an egg sandwich.
Ingredients:
Bread (of your choice)
1 egg per sandwich.
2 TBSP of Mayo per sandwich. ( 1 cup for 12 eggs approximately)
Salt, Pepper
Green onion (or 1/2 a regular yellow onion)
Sriracha
Steps:
Add the egg to warm water and bring to a boil.
Boil the eggs for 10 min.
Cool down the eggs in an ice bath and peel immediately. Dip back in cold water to help and to clean the small shell that sticks to the egg.
Once peeled, mash the eggs until you reach a small granulated texture, no big chunk.
Add the mayo, chopped green onions, salt and pepper and sriracha.
Serve with your favorite bread, toasted with butter or not depending of your mood!
