Vegetarian Burrito with Tofu ground Beef

This recipe always reminds me of summer !
Ingredients:
- 2 cup of tofu ground beef 
- 1 can of kidney bean 
- 1 cup of corn 
- 1 crate of mushroom 
- 2 bell pepper 
- 1 onion 
- 1 carrot 
- 1/2 bulb of garlic 
- 1/2 tsp chipotle powder 
- 1 tsp cumin 
- 2 big tsp oregano 
- 1 tsp chili powder 
- 1 tsp paprika 
- 1/2 tsp chili flakes (optional) 
- 1 to 2 cup of liquid (broth or salsa) 
- Juice of 1/2 a lemon or lime 
Toppings:
- Lettuce 
- Tomato 
- Sour cream 
- Grated cheese (Monterrey jack or sharp cheddar) 
- Refried beans 
- Salsa 
- Guacamole (optional) 
- Cilantro (optional) 
Steps:
- Cut all the veggies and put aside. 
- in a pan add the carrots, onion, mushroom and garlic and start cooking at medium high until slightly golden and no more water in the pan. Add the spices and mix well. 
- Add the corn, bean, tofu and some of the liquid until you reach a creamy texture with the tofu. 
- Cook until everything is hot and creamy. 
- Add the Bell pepper and cook for 2 to 3 min. 
- Serve in flour or corn tortilla with your favorite toppings.
