Vegetarian Burrito with Tofu ground Beef

This recipe always reminds me of summer !


Ingredients:

  • 2 cup of tofu ground beef

  • 1 can of kidney bean

  • 1 cup of corn

  • 1 crate of mushroom

  • 2 bell pepper

  • 1 onion

  • 1 carrot

  • 1/2 bulb of garlic

  • 1/2 tsp chipotle powder

  • 1 tsp cumin

  • 2 big tsp oregano

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1/2 tsp chili flakes (optional)

  • 1 to 2 cup of liquid (broth or salsa)

  • Juice of 1/2 a lemon or lime


Toppings:

  • Lettuce

  • Tomato

  • Sour cream

  • Grated cheese (Monterrey jack or sharp cheddar)

  • Refried beans

  • Salsa

  • Guacamole (optional)

  • Cilantro (optional)


Steps:

  1. Cut all the veggies and put aside.

  2. in a pan add the carrots, onion, mushroom and garlic and start cooking at medium high until slightly golden and no more water in the pan. Add the spices and mix well.

  3. Add the corn, bean, tofu and some of the liquid until you reach a creamy texture with the tofu.

  4. Cook until everything is hot and creamy.

  5. Add the Bell pepper and cook for 2 to 3 min.

  6. Serve in flour or corn tortilla with your favorite toppings.
